A very versatile staple salad dressing to keep on hand in your fridge.
Great on all types of Salad!
- 2/3 cup of good quality olive oil ( first cold pressed )
- 1/3 cup of white wine vinegar -( may substitute red wine vinegar or fresh squeezed lemon juice without the seeds)
- 2 Tablespoons of dry rubbed oregano ( crush in between the palms of your hands to release flavor)
- 1 tablespoon of salt
- 12 grinds of fresh black peppercorns
Whiz all ingredients with hand held electric mixer at high speed until oil and vinegar is emulsified together.
Store in the fridge in a clean glass bottle, suitable to bring to the table when serving salad.
